Apple Pie but make it a flower
This is my mom’s signature dish. The one all her friends ask her to make for them every year. She has graciously allowed me to share her recipe with you all and I am so happy to do so.
Something I have always loved about my mom’s pie was the decorating of the crust. I would always help her make the leaves growing up and was excited about building something beautiful. What made my mom’s apple pie recipe so special was not only the classic taste but the beauty of this dish.
What I am sharing here is just one of her designs. She didn’t necessarily make up this design/the crust pattern but it’s always showed her creativity. I will share more of her designs later on the blog, so stay tuned. Enjoy this classic dessert with your family.
What You May Need
- Pie Dish – This is very similar to the one I have, this is the one I want.
- Whisk – You don’t need anything crazy. Here’s a simple one.
- Rubber Spatulas – A necessity in all baking and cooking.
- Mixing bowls – These are the ones I would get if I needed new ones.
- Pie Crust Shield – I don’t have one of these I always use foil, but I think it could be handy. Also depending on your pie dish you may not have crust that needs covering.
Like mine [pictured above]. - Potato Peeler or apple peeler – I’m fine with a potato peeler but it is helpful to have the apple one.
The Recipe:
Ingredients:
- Pie Crust – I have a butter pie crust recipe that I am married to, Blog is live 11/20/24. You can buy pie crust from the store, just beware of the ingredients! That’s why we make things homemade so we can know what’s going in and feed ourselves the best possible ingredients!
- 5 Apples – Honey crisp is always a good option. It is better to go with a more tart but crisp apple. You don’t want a sweet, sweet apple like Envy [Cut in larger cubes].
- 2 Tbsp Fresh Lemon Juice
- 1 Tsp Cinnamon
- 1/3 Cup Sugar – My mom puts 1/2, but I think it is fine with less.
The crumble crust
- 1/4 Cup Butter – Soft not melted.
- 1/4 Cup Sugar
- 1/4 Cup Flour
Method:
- Pre-Heat your oven to 425F/218C.
- If you are using frozen, store bought dough, make sure you take it out of the freezer at least an hour before using it so it’s thawed.
- Take your 5 apples and wash them. Then you are going to peel all 5 apples.
- Next you are going to cut up your apples. Make sure you leave them a bit bigger than you would think. If you cut them too small they will be mush in the pie.
- Place all the apple pieces in the mixing bowl.
- In your bowl of apples, add lemon juice, sugar and cinnamon. Mix well and set aside.
- Now you are going roll out your own dough or unroll your frozen one and lay it into your pie dish. As pictured above.
- Then you are going to trim the excess crust away from the pie dish. Depending on your pie dish, you may need to leave more crust than I did.
- Next you will put parchment paper on your dough and add about 2 cups of uncooked beans.
This keeps the crust from rising while it precooks. To keep the shape. - Bake for 5-10 minutes. Just enough to precook the bottom a bit.
- Your dough should not have changed in color and should look a little glossy. Like the above.
- Now add the apples to the pie. Do not pour all the liquid otherwise it will accumulate at the bottom of the bowl.
- Time to make the little crumble. Add the soft butter, sugar and flour to a bowl and mix. Add that on top of the apples in the pie.
- I always love to use the scraps of dough we cut off in the beginning. We will re-shape that crust and roll it out to use it for our leaves.
- Now when the crust is flat and ready, take a sharp knife and cut your leaves. As pictured above.
- Start putting on your leaves one by one and layering them on the pie.
- Once you are finished layering the leaves it should look something like the above. I also like to add three little balls at the center. As pictured above.
- In a small bowl, add an egg and a splash of whole milk. Mix with a fork until combined.
- Brush the top of your pie with the egg wash. This gives it that nice brown buttery look when it is done baking.
- I also put my pie on top of a parchment lined baking sheet. This ensures that the apple and sugar mixture that bubbles up when it starts cooking doesn’t spill onto the bottom of the oven and burn, causing smoke in your kitchen! (Trust me).
- Insert your pie in the oven and bake for 55 minutes to 1 hour and 10 minutes. It depends on your oven!
- You are done!!! Let the pie cool down and settle for 30 minutes to an hour. Enjoy this treat all winter long!
The magic of the first slice is real. I would also suggest giving this pie as a gift this holiday season!
