Not your traditional egg salad
I grew up with my mom always eating an egg salad sandwich on home-pride bread. This recipe consisted of mayo, yellow mustard, salt and pepper. Of course we can’t forget the home-pride (if you also grew up with this bread let me know in the comments!) I wasn’t a fan of this when I was younger. As I got older I saw the appeal.
Fast-forward, I have not had an egg salad sandwich in probably 8 years? Once I started becoming into nutrition, labels and recipes, there were certain things that just didn’t interest me anymore.
What inspired this recipe?
What inspired me this morning to make this completely on a whim?
I opened the fridge and was going to make some eggs over medium. Then I crack my egg and find it is hard boiled. I think to myself, “I guess I am going to have to eat these then”. Spark. The ingredients come to my head and I make this breakfast. That is not traditional, not full of mayo, but it is high protein, full of nutrients and is just outright tasty. I hope you love this recipe as much as I did!! It’s a good one!
Ingredients
- 2 Hard boiled eggs
- 8 Green olives
- 2 Tbsp cilantro chopped
- 1/4 Of a large avocado
- Red onion – your desired amount – chopped
- 2 Tbsp extra virgin olive oil
- Fresh ground pepper
- Sourdough – if you have it
- Garlic herb butter or regular butter
Method:
- First thing you will do is hard boil 2 eggs. Bring a pot of water to a boil, place your eggs inside and boil them for 10 minutes, remove from hot water and place into a bowl of cool water. Let them cool completely before starting the recipe.
- Once the eggs have cooled you are going to peel them and chop them up – as pictured above.
- Then you will take your fresh cilantro and roughly chop it. Add it to the egg salad bowl.
- Now for the onion, take your desired amount of onion and chop it small. Add it to the pile.
- Take your avocado and cut it into 4th’s. Take your piece and add it to the egg salad bowl.
- Time to grab your green olives and chop them up small. Add them to the bowl followed by the olive oil and ground pepper.
- Mash everything up very well – as pictured above.
- For the sourdough, it’s time to toast it! If yours is a little old like mine was I have a great tip for you. Take some water and rub it all over the slice and stick it in the oven. It will give the bread a new life.
- If you have garlic herb butter, I highly recommend using it. It is super easy to make. Add it or regular butter to the bread (always remember to use quality ingredients when you can).
- Add the Loaded Egg Salad on top. Sprinkle good salt and enjoy!

OMG YAY!!! So glad to here it!! I had it for breakfast again today!!
I like making my own egg salad as well but I use light sour cream replacing the mayo for less fat. I’ll try to add some avocado next time. Sounds so good
