
Nothing hits quite like Easy Pasta Dinner with Chicken and Mushrooms
This Easy Pasta Dinner with Chicken and Mushrooms is packed with oyster mushrooms, cherry tomatoes, and chicken, it leaves you satiated and content. The umami from the mushrooms pairs perfectly with the sweetness of roasted tomatoes, and the tender chicken brings it all together for a balanced, nourishing meal. I always recommend making the pasta from scratch if you have the time and tenacity.
What inspired this pasta dish?
Welcome back to the Table! Happy to have you here! It has been a hot minute since I have written a blog, and I took a much-needed time away. But now I am back and in action. It feels really good.
Since falling pregnant, I have been wanting pasta. I suppose that would be my one and only “craving”. I also am a health nut, so keeping that in mind, I try to cook healthy/healthier options. So, the first thing is an easier, nutrient-dense option. I saw the mushrooms in my fridge and thought, ‘hell ya’. I had some sparkling white wine from when a friend was over and I always keep tomatoes on hand. The idea of these together just hit perfectly.

Why homemade pasta…
Ok, I am a die-hard do-it-yourself if you have time. If you don’t have time and you can afford the better pasta, I always recommend going with the best quality.
Why make it yourself? It is actually way easier than you think and only takes about an hour, including wait time, and it is way more nutrient-dense and packed with protein!
I don’t have time, what pasta should I buy? This is the one I recommend: DeCecco Pasta, and get it at Whole Foods. There’s also some decent organic ones at Trader Joe’s!

What makes this recipe nutrient-dense?
- Oyster Mushrooms – They’re rich in antioxidants, support heart health, and contain beta-glucans that boost immunity. High in plant-based protein and fiber, they help regulate blood sugar and promote good digestion—all while adding delicious umami flavor to any meal.
- Cherry Tomatoes – Loaded with antioxidants like lycopene, which support heart health and protects against inflammation. They’re rich in vitamin C for immune support, vitamin A for healthy skin, and potassium for balanced blood pressure.
- Pasture Raised Chicken – When the birds roam and forage naturally, their meat contains higher levels of omega-3s, vitamin E, and antioxidants compared to conventionally raised chicken. It’s a clean, wholesome protein that supports muscle repair, energy, and overall wellness.
(I know it can be hard to find, so do your best just to buy high-quality chicken!
What you need for this recipe:
- A dry white wine – I even used a dry sparkling white wine, and it was totally good. Options like Sauvignon Blanc or Pinot Grigio. They have great, cheap options at Trader Joe’s. And usually, the person in the wine section knows what they are talking about.
- Cheese Grater for the parm – I linked the one I use. It’s super handy and cheap.
- Quality Pasta – If you aren’t going to go with homemade, this is the one I buy. De Cecco. It is actually made in Italy and dried by air.
The recipe:

Ingredients:
- 2 Tbsp Extra Virgin Olive Oil
- 1 Tbsp Butter
- 2 Shallots – Finely chopped
- 3 Cloves of garlic – Minced
- Fresh oyster mushrooms, about 3.5-ounce (100g). I used a package of oyster mushrooms from Trader Joe’s.
- Cherry Tomatoes 2 handfuls – Cut in 4ths
- 1 Cup of dry white wine (or sparkling dry white)
- 1/2 Cup of bone broth or whatever broth you have on hand
- 1/2 Lb of chicken – I chose chicken thighs, but you can also use breasts
- 1/2 Cup of freshly grated Parmesan
- A handful of fresh basil pulled apart by hand
- Pasta, enough for two people
- Fresh Ground Pepper
- A pinch of salt (more to add to taste)
Method:


- First, you are going to slice your oyster mushrooms pretty thin. Then add a bit of olive oil to your pan.
- Sauté the mushrooms until they become golden on both sides. Remove from the pan to a bowl and set aside.



- Now you are going to add the olive oil and butter to the same pan and add your chopped shallots, and cook them down for 2 minutes, followed by the minced garlic. Cook those down until aromatic.
- Add your cherry tomatoes, followed by your wine and broth.



- Time to add your sliced chicken, followed by the oysters back in. Stir.
- Close the lid and allow to cook on low for about 15 minutes. (You can check the inner temp of your chicken depending on how thick you cut them, but they should be ready after 15 minutes.)
- While it is cooking, it is a good time to start cooking the pasta. Bring a pot of water with salt to a boil. Add the pasta and cook for the time allotted on the box!


- Add your 1/2 cup of Parmesan and a handful of basil.
- Give that a good stir and make sure the parmesan is all cooked in and then you are ready to plate.


- Add pasta to a plate and top with the sauce. Sprinkle fresh Parmesan and basil on top and ENJOY!!!!
