What Inspired the Buckwheat Loaf?
First off, don’t judge a book by its cover. This was my first attempt and the flavor and texture are spot on. Who cares if the top looks a little funky! Give her grace and try this recipe!
So, I have heard of buckwheat, that it was nutrient dense, flavorful and interesting. Dr. Mark Hymen talks about buckwheat sometimes on his podcast, but I have never ventured to make it.
One day my friend Marissa came over, holds up this bag of buckwheat and she said “I have buckwheat but will never use it, I figured it’s something you might use?” My response “hell yeah I will!”
Then on a random Monday I remember I have this buckwheat in my cupboard. I research a few recipes and I start soaking the buckwheat and doing more research on why buckwheat is good for you. WOWza, I was impressed. Not to mention it’s gluten free? Win again.
I made the loaf and I love it. I just put butter on it and It was so good.
What you may need for this recipe
- A Food Processor – The one I have is old, this is the one I would get now! You will need a food processor or fast-speed blender.
- Bread Knife – Buckwheat is a very dense bread and wheat, have a good knife to cut it is essential.
- Buckwheat – Of course. In everything we eat it is important to buy quality always and when we can, organic! Here is the buckwheat I use.
- Bread Pan – Obviously for baking the loaf! I used a normal glass one as of now.
- Quality Parchment Paper – It is important to get parchment paper that is not bleached! This is the one I use and it’s a great deal!

The Recipe:
When making this buckwheat bread keep in mind it is not like normal bread. It is dense and packed with nutrients. Try not to expect it to taste or be like normal bread, it is a flavor and texture of it’s own, which is what makes it so amazing! YAY!
Ingredients:
- 2 Cups of Organic Whole Grain Buckwheat
- 3 Cups of Water
- 1 Small Apple or Pear – Peeled and Cubed
- 1 Tsp Salt – I use Real Salt or Celtic
- 1 Tbsp Baking Powder
- 1 Tsp Cinnamon – You can skip this step but I felt it gave it a good flavor!
Method:
- When you are making this, be sure to plan head, the buckwheat needs to soak for at least 4 hours.
- So, pour your 2 ups of whole grain buckwheat into a mixing bowl, followed by 3 cups of water.
- Stir it well and place plastic wrap on the bowl. Let it soak for at least 4 hours.
- Now we are going to Pre-heat your oven to 425F/218C, strain and rinse our buckwheat in a fine strainer.
- Then add it to your food processor along with your chopped apple or pear, cinnamon, salt and baking powder.
- Blend until it creates a creamy, very light texture. You may have to scrape the sides with a rubber spatula a few times! [Should come out looking like the last photo above].
- Next you are going to line a bread dish which parchment paper! You cannot skip this step or the bread will stick to the loaf pan.
- Pour your dough into the parchment lined dish and smooth it out.
- Place your buckwheat loaf into the pre-heated oven for 1 hour.
- After the hour, remove it immediately from the baking dish and put it on a wire rack to cool.
- If the crust feels hard, don’t worry, that’s normal! You can let it cool until you can handle it enough to cut it, because it’s really tasty warm.
- You are finished!! Enjoy all the health benefits and taste of this Buckwheat Bread!
