Instructions
When you are making this, be sure to plan head, the buckwheat needs to soak for at least 4 hours.
So, pour your 2 ups of whole grain buckwheat into a mixing bowl, followed by 3 cups of water.
Stir it well and place plastic wrap on the bowl. Let it soak for at least 4 hours.
Now we are going to Pre-heat your oven to 425F/218C, strain and rinse our buckwheat in a fine strainer.
Then add it to your food processor along with your chopped apple or pear, cinnamon, salt and baking powder.
Blend until it creates a creamy, very light texture. You may have to scrape the sides with a rubber spatula a few times! [See article for picture reference].
Next you are going to line a bread dish which parchment paper! You cannot skip this step or the bread will stick to the loaf pan.
Pour your dough into the parchment lined dish and smooth it out.
Place your buckwheat loaf into the pre-heated oven for 1 hour.
After the hour, remove it immediately from the baking dish and put it on a wire rack to cool.
If the crust feels hard, don't worry, that's normal! You can let it cool until you can handle it enough to cut it, because it's really tasty warm.
