Chicken Sausages & Peppers – Healthy Week Night Dinner
Eat healthy while not breaking the bank with my ‘healthy dinner’ recipe! Sausage and peppers, topped with my cilantro sauce. It is literally insanely good.
Inexpensive dinner + healthy = happy you
Guys, I know how dauting it can feel to go to the store and feel like its so expensive to eat healthy and overwhelming when just starting. I really get it. One of the places I frequent when on a budget for groceries is trader joes, honestly I compared a lot of their products to other stores and most of the time its cheaper at TJ’s. I get sometimes the quality of vegetables isn’t the best but sometimes they get good stuff. So, you gotta be on the look out. Total this dinner costed around 10 dollars and it feed 4 people. What inspired this recipe?
I wanted to eat healthy while also not spending a bunch of money and this recipe is it. I also get asked frequently on my other socials to do recipes that are 1. less complicated and 2. don’t cost so much. Honestly food prices are going up and we have to do our best to eat healthy while not going broke. My sauce also closest like 1 dollar to make – went you have the ingredients – and it is so amazingly good. I chose the jalapeno chicken sausage from trader joes as the protein, they are cheap and really tasty.
The Ingredients
-Pack of Trader joes Chicken Sausages – I like the jalapeno ones
-Bell Peppers – Red, Orange & Green
-Red Onions – 2 Medium
-Evoo, avocado oil or ghee
For the dressing:
-Cilantro Bunch
-1 Large Garlic Clove
-3 Green Onions
-1 Jalapeno – Seeded
-1 Cup of Full Fat Greek Yogurt
-3 Tbsp Mayo
-Juice of One Lime
Method:
-You will start by cutting your bell peppers in long thing pieces – as pictured above. Followed by the red onions, cut in a similar way. Place them all in a large pan with extra virgin olive oil. Cook well until they are soft.
-Time to add the sausages! I like to cut them diagonally and long, they cook well this way and I think it esthetically look better. Continue to cook these until they brown on both side.
The Cilantro Sauce:
-In a high-speed blender add, cilantro, garlic, green onions, jalapeno – seeded, full fat Greek yogurt, mayo and the juice of one lime. Blend until smooth. Keep in fridge for up to 4 days.
-Your healthy week night dinner is complete. My husbands loves to eat these with my homemade tortillas. I like to eat this on top of an arugula salad, topped with avocado. I hope this makes one of your meals this week a little easier!
