Danish Winter Salad Recipe

The Danish Winter Salad or Red Cabbage Salad.

I was on the hunt for a Danish recipe that leaned towards the healthier side and stumbled upon this Danish winter salad. Traditionally intended for the winter or as a Christmas salad, I believe it’s equally delightful for Thanksgiving or even in the summer. For a summery twist, swap out the pomegranate for a refreshing orange, although now is the perfect time with pomegranates in every store.

My initial impressions upon tasting this were vibrant, fresh, and zesty. The dill perfectly complements the dish, and the homemade dressing is simply perfection. There are various ways to prepare this salad. Some recipes feature oranges, parsley, or walnuts, all of which sound appealing, but I preferred the simplicity of this version. I believe it would pair beautifully with a main course of steak or lamb.

History of the Danish Winter Salad.

Traditionally, Danes serve pickled red cabbage for Christmas Eve dinner. This fresh version of red cabbage is a recent addition to the Danish menu. The fresh red cabbage salad offers a lighter alternative to the traditional dish. The pickled traditional Danish red cabbage salad, known as Rødkål, quite literally means ‘red cabbage’.

Health benefits of highlight ingredients.

When I search for or create recipes, my goal is to focus on nutrient-dense options. I firmly believe that food is a form of medicine and that our well-being is closely linked to what we eat. With that in mind, while all the ingredients in this recipe are wonderful, I’d like to highlight the top two for their nutritional benefits.

Red cabbage: Packed with antioxidants, high in vitamin C, boasts anti-inflammatory properties, and aids in promoting gut health.

Pomegranate: Loaded with antioxidants, particularly punicalagins and anthocyanins. These elements offer anti-inflammatory effects and support both brain and digestive health.

Ingredients to make Red Cabbage Salad.

This is a very simple recipe, just 4 ingredients for the salad and just 6 for the dressing. I made a single serving for myself when I made this red cabbage salad, however I am going to do a 4 person serving for this recipe, you can always half it or third it. If you are making this in the spring or summer you can use an orange instead of the pomegranate. Danish Winter Salad.

For the salad:

-Half red cabbage thinly sliced
-Tart apple thinly sliced
-Half pomegranate (seeds)
-2 Sprigs of dill

For the dressing:

-2tbsp pomegranate juice (or molasses but I couldn’t find)
-1tbsp balsamic vinegar
-Finely grated ginger
-1tbsp soy sauce
-1tsp runny honey
-3tbsp olive oil

Method:

  1. Slice all your ingredients thinly, chop your dill and add them to a large bowl.
  2. Add all the dressing ingredients together and pour over salad ingredients.
  3. Mix very well and garnish with extra dill on top.
  4. Enjoy this simple Christmas Danish delight.

Notes

  • If you are making this salad in the summer and are having trouble finding a pomegranate, I suggest using an orange instead.
