Greek Yogurt Bark

Way too convenient and delicious not to make and have on hand. I’m a huge ice-cream lover and this yogurt bark totally satisfies that craving.

Hot weather + Refreshing dessert = Happy life

Its not that complicated, is it. hehe. This recipe is healthy and easy. If you prefer to watcha video of the recipe unfold I linked it here. I love utilizing Greek yogurt in recipes because its a good source of extra protein and the creaminess of it makes for good sauces and desserts. When I work with Greek yogurt I like to use full fat. When having a healthy diet I believe – at least for myself – healthy fats and vital to a healthy diet. So, that’s a big reason I love Greek yogurt. What Inspired This Recipe:

Finding healthy desserts is like a hobby and a sport. I enjoy classic desserts on occasion but have healthy ones regularly. I like to have desserts like – the yogurt bark – on hand incase I have a little sweet tooth. When I was starting my health and wellness journey – and actually taking it seriously – I would have desserts like this on hand. This ritual was vital for me at the time because when building my self-control and discipline I could not – and I mean COULD NOT – have processed desserts in the house. I had little self control and would get to the end of the day and eat whatever was in my fridge or pantry. It was a sad and hard time in life. I had to make dedicated decisions and choose not to have unhealthy things in my house and fill it instead with healthier alternatives.
Recipes like this were vital for me at the time and now they just serve as a pleasure to have around.
I hope you try this and remember that future you will thank you for the work you put in today.

What you will need

-Small rectangular baking dish or 9×9 dish
-Rubber spatula
-Parchment paper
-Glass storage container – to store finished bark

The Ingredients

-Quality Honey – going forward I am using a better, raw honey I bought. I love it
-Full fat Greek yogurt – you don’t have to use full fat but I talk about why I do in the intro
-Fruit of choice – I used peaches and yellow kiwi and it was amazing

Method:

-We are first going to line a baking dish with parchment paper. I crinkle up the parchment first before and then straighten it out. This helps it stay in place better.
-Then you will take your Greek yogurt and give a few good scoops onto the parchment. With your rubber spatula, smooth out the yogurt into an even layer.
-Add the honey and take your spatula and smooth the honey over the yogurt evenly.

-The final touch is your fruit of choice. I personally love the kiwi, peach combo but I know the seasons for these fruits are almost over. Going in to fall I would probably use figs, raspberries and pomegranates. Which all sound good to me.
-Place the finished bark into the freeze until it is solid.

-When it is finished it should look something like this – above picture.
-Crack it with your hands into big bark pieces. Again the video on my IG is so satisfying when I get to crack the bark.
-Store in a glass container in the fridge for up to 3 month. Enjoy!

Ingredients
