Welcome back to the Table. Today, you have stumbled upon my favorite dessert/snack of 2025. Why? Because there is nothing like eating something healthy and having it actually taste good. Also, there is a special ingredient in these blueberry muffins that I discovered actually makes them fluffy and rise properly!

The Secret Ingredient to healthy muffins:

Arrowroot powder. This is the ingredient I added to my muffin recipe, and it totally changed the texture in the best way! It is a must in this recipe.

What you will need for this recipe:

  • Muffin Pan – An obvious need for this recipe. I linked a cheap 12 muffin count one!
  • Non-toxic Muffin Liners – These are great ones! I also used my parchment paper for this recipe and cut it up, but it is harder to deal with.
  • Arrowroot Powder – This is a necessity for this recipe. I linked the one I am currently using and am happy with.


What makes this recipe nutrient-dense? 3 highlights

  • Almond Flour – is a healthy choice because it’s made from whole almonds, making it naturally rich in protein, fiber, and heart-healthy fats. It’s lower in carbohydrates and has a lower glycemic impact than refined flour, helping support stable blood sugar levels and lasting energy. Almond flour is also gluten-free and provides key nutrients like vitamin E and magnesium, making it a nutrient-dense option for baking and cooking.
  • Blueberries – packed with antioxidants, especially anthocyanins, which help protect cells from oxidative stress and support brain and heart health. They’re high in fiber and relatively low in sugar, helping with digestion and blood sugar balance. Blueberries also provide vitamin C and vitamin K, making them a nutrient-dense fruit that supports immunity and overall wellness.
  • Maple Syrup – the healthier alternative to refined sugar because it’s less processed and contains naturally occurring minerals like manganese and zinc, which support metabolism and immune health. Unlike white sugar, maple syrup has antioxidants and a slightly lower glycemic impact, helping reduce sharp blood sugar spikes when used in moderation. Its rich flavor also means you often need less, making it a more balanced, natural sweetener choice.

The Recipe:

Ingredients:

  • 3 eggs
  • 1/2 cup maple syrup
  • 1/4 cup olive oil
  • 1 tbsp lemon juice
  • 1 tsp vanilla
  • 2 cups almond flour
  • 1/2 cup arrowroot starch
  • 1.5 tsp baking powder
  • 1/2 tsp salt
  • 1.5 cups blueberries

Method:

  1. First, preheat the oven to 350F/175C.
  2. Now, for this blueberry recipe, we mix our wet ingredients, starting with: 3 eggs, maple syrup, and olive oil.
  1. To conclude the wet ingredients, add the lemon juice and vanilla. Mix well and set the bowl aside.
  1. In a separate bowl, add the dry ingredients, almond flour, arrowroot starch, baking powder, and salt.
  1. Be sure to mix the dry ingredients well to avoid clumps.
  2. Pour the dry ingredients into the wet ingredients.
  1. Pour blueberries into a mixing bowl of muffin ingredients.
  1. Now, pour the muffin mix into your muffin tin.
  2. Place in a preheated oven and bake for 22-28 minutes, until golden, and the toothpick comes out clean.
  3. Allow the blueberry muffins to cool for 10 minutes in the tin before transferring them to the wire rack.
  1. Your muffins are done!! Enjoy these yummy muffins and make them for your favorite people!
