Chocolate Date Balls

Healthy snack, seed cycling friendly, and a great way to get your pregnancy dates in. If you're like me and have a sweet tooth by nature, but you eat clean. This recipe is for you. These date balls are easy to make and really satisfy that sweet tooth.

- 8-10 Medjool dates I used organic
- 2 Tbsp raw sesame seeds
- 2 Tbsp raw sunflower seeds
- 2 Tbsp hemp seeds
- 1/3 Cup nut butter I went with peanut butter
- 2 Tbsp cacao powder
- 1/2 ish Cup of dark chocolate chips for melting
First you are going to de-seed your dates and set them inside your food processor.
Process the dates enough that they start to break apart.
Add peanut butter and seeds. Blend and scrape sides; you may need to do this a decent number of times.
Add the cacao powder and blend until it's like a sandy texture! (As pictured below). If there are little pieces of seeds, that's OK!
Take some of the mix into your clean hands and press/roll into balls. The first time I made this recipe, I made the balls a bit too big. The next time I made this, I made them bite-sized, and it made around 30 or so balls.
Place your date balls on a parchment-lined dish and freeze for about 20 minutes. Long enough for them to get cold.
When the date balls are about ready to come out of the freezer, it is a good time to start heating up your chocolate.
Remove the balls from the freezer and dip them in the bowl of melted chocolate.
Put the chocolate-covered date balls back onto the parchment paper and add some flaky salt on top!
When all the date balls are covered in chocolate and placed on the parchment paper, put them back into the freezer for about an hour or so.
When the date balls have chilled, they are ready to be enjoyed!! Keep them frozen in an air-tight container!
